How to Make Thin Mint Cookies on a Budget

Now that I've polished off the last of the Girl Scout cookies, I'm experiencing intense withdrawal.  In fact, at this very moment, I'd give my right arm for a sleeve of Thin Mints!  So what's a girl on a budget to do?  Make my own batch of Thin Mints, of course!

This simple, yet delicious recipe can be made with just three ingredients:  Wilton chocolate baking chips, Ritz Crackers and peppermint extract.  The baking chips can be purchased for around $3 to $4 at Michael's craft stores.  However, I always use a 40% off coupon which I receive weekly in their email ad.  And you can even substitute the Ritz Crackers for Aldi's brand for under $2.

Melt the baking chips in the microwave according to the directions on the package.  Splash in four drops of peppermint extract and stir.  Dip each cracker into the chocolate and let dry on wax paper.  Refrigerate for half an hour and serve.  This fabulous Thin Mint cookie recipe makes two sleeves of crackers and is an easy and delectable treat on a budget.
