Mother's Day Recipes: An Easy Egg Casserole

What better way to honor our mothers than with a hearty, home cooked meal?  This year I'll be hosting a simple and economical Mother's Day brunch on a budget and I'll be serving my very favorite egg casserole.  This Mother's Day egg casserole can be made the night before and then heated up in the morning.  And it only costs a few bucks to prepare!  In fact, all of the ingredients can be purchased at Aldi.

Here's the recipe:
  • Cover the bottom of a 9 by 13 pan with 8 hashbrown patties.
  • Sprinkle 3 cups of shredded cheddar cheese over the potatoes.
  • Spread 2 cups of chopped ham over the cheese along with 1 cup of pre-cooked bacon.
  • In a bowl beat together 8 eggs and 1 cup of milk.  Toss in a dash of salt and pepper and pour over the potato mixture.
  • Cover with foil and bake for 50 minutes at 350 degrees.
  • Uncover and continue to bake for another 15 minutes.
This super simple Mother's Day egg casserole can be paired with a bountiful fruit salad and a platter of bagels with cream cheese.
