A Simple Mother's Day Lunch Menu on a Budget

This Mother's Day menu plan is so simple, even dad and the kids can handle the preparations!  And, of course, it's easy on the budget too.

Salami Stick Appetizers

One of my favorite appetizers, salami sticks are easy and economical to prepare.  Spread thinly sliced hard salami with Cheez Whiz or cream cheese and roll around crunchy Italian bread sticks.

Entree - Pulled Pork Sandwiches & Sweet Potato Fries

For your Mother's Day main entree, place a two pound pork loin in a crock pot and pour over a bottle of your very favorite barbecue sauce.  Cook on high for 4 to 5 hours, or low for 7 to 8 hours.  Once the loin is cooked, shred it with a fork and serve it on soft Kaiser rolls.

Cook up a bag of sweet potato fries (for just a few bucks at Aldi) until crispy and serve with the pulled pork sandwiches.

Dessert - Pink Lemonade Pie

For a delightful Mother's Day dessert, combine one can of frozen pink lemonade (thawed) with one can of sweetened condensed milk.  Mix thoroughly and gently fold in one 8 ounce container of whipped topping.  Pour into a pre-made graham cracker crust and refrigerate overnight.

Grab the kids and the above ingredients and create a lovely Mother's Day Lunch on a budget!
