It's that time of year again - when we seem to be invited to a barbecue every single weekend! Mind you, I'm not complaining. I love a good summer cookout as much as the next gal, but I sometimes run out of side dish ideas to bring along to the party. Well, here's a simple summer salad I recently discovered that makes the perfect backyard barbecue addition.
A Simple Summer Salad:
- One bag of bib lettuce
- 1/2 pound of cooked and crumbled bacon
- One cup of shredded swiss cheese
- One cubed cucumber
- A dozen croutons
- Your favorite salad dressing
Mix all of the above ingredients together and serve immediately for a fresh and delicious summer salad on a budget!
Every time I am invited to a barbecue, I bring along this simple summer salad that can be assembled for under $10.00.
Here's the recipe:
- One bag of bib lettuce
- One can of Mandarin oranges
- Two cups of cooked bow tie noodles
- Two cups of chopped, cooked chicken breast
- One cup of cubed cucumbers
- Red wine vinegar or similar salad dressing
- Sliced almonds - optional
Gently mix all of the above ingredients together and serve.
